After a lot of Indian food this weekend with the festival ongoings, I felt like something brothy… and ramen is one of my most favourites as you can slap a lot of stuff together in one big bowl with noodles and slurrrpp!!
If interested in trying one yourself, here’s the recipe for this one (serves 2) – it mainly contains a few preps then throwing it all together 🙂
Pork: Marinate 2 pork steaks in a sauce made up of 2 tbsp. hoisin sauce, 1tsp sugar, 1 garlic crushed garlic clove, 1/2tsp sesame oil, pinch white pepper and 1tsp soy sauce. Leave for an hour or overnight (I did this as soon as I was home so ignored that rule, but you could prepare them for next days dinner in advance).
Griddle fry or wok fry in some oil as I did here for a few minutes on each side till done. Set aside to rest then slice on the diagonal.
Noodles: Cook noodles accordingly, drain and leave aside.
Egg: Boil one till hard boiled – 15mins or so.
Broth: Heat up around 500ml stock and add a combination of 1tsp sugar, 1tbsp rice vinegar, 2tbsps sweet chilli sauce and 3tbsps fish sauce. Add whatever veg you may have (I used carrots and salad leaves and bit of coriander).
Put the noodles into the broth till heated through and ladle into two bowls, placing the pork on top with the egg, a sliced lime (optional) and more coriander. Then sluurrrppp 😀
* This looks like a long recipe but it took me around half an hour to do it all. Get your noodles and egg to boil whilst sorting the meat which is left to the side while you heat up the broth and stick some bits in it for flavour… so worth it.
